Argentinian Potato Pie (Pastel de Papas)


  • Preheat oven to 425°F. Spray 2-1/2-quart shallow baking dish with cooking spray; set aside.
  • Place potatoes and salt in large saucepan; add water to cover. Cook over high heat 20 minutes or until tender. Drain; return potatoes to saucepan. Add Parkay; mash with potato masher until smooth.
  • Meanwhile, heat large skillet over medium-high heat. Add beef, onion and pepper; cook 10 minutes or until beef is crumbled and no longer pink, stirring occasionally; drain. Add tomato sauce, adobo seasoning and cumin; cook 2 minutes more or until hot and bubbly.
  • Pour beef mixture into baking dish; top evenly with mashed potatoes. Bake 10 minutes or until hot.
