Lobster BLTs


  • Place bacon in large skillet over medium heat, sprinkle with desired amount of pepper; flip and sprinkle with additional pepper. Continue cooking until desired crispness is reached. Remove to paper towels and set aside.
  • In medium bowl, combine mayonnaise, tarragon, lemon juice, shallots, garlic and cayenne pepper. Gently toss with lobster meat.
  • Divide lobster among Ciabatta rolls, top with bacon, lettuce and tomato.
