DIRECTIONS

  • In large saucepan or Dutch oven, cook bacon over medium heat. When crisp, remove to paper towels to drain. Pour off excess bacon drippings, but don’t clean out pan.
  • Return pan to stove over medium heat. Add butter; when melted, add onions, celery, red pepper, garlic and Old Bay. Sauté vegetables until tender (about 5-7 minutes).
  • Add flour; stir to coat vegetables. Cook 1 minute. Whisk in chicken broth. Add potatoes and bring to a simmer. Simmer 15-20 minutes or until potatoes are fork tender, stirring occasionally.
  • Add half & half and corn; bring to a simmer. Remove from heat. Stir in crab and thyme. Let stand 5 minutes before serving.
