Tex-Mex Kidney Bean Soup


  • 1. In large saucepan or Dutch oven over medium-high heat, cook and crumbled beef, onion, pepper, cumin, chili powder and cayenne pepper until no longer pink; salt and pepper to taste.
  • 2. Add in broth, cooked beans, tomato sauce and tomatoes. Bring to a simmer; simmer 10-15 minutes.
  • 3. Remove from heat and stir in cilantro. Serve garnished with cheese, avocado and chips, if desired.
