Slow Cooker Chicken

DIRECTIONS

  • Rinse chicken and pat dry. Sprinkle inside and outside of chicken with lemon pepper seasoning. Place chicken in large slow cooker.
  • Place onions, carrots, potatoes and garlic around chicken. Add chicken broth to bottom of cooker. Cover and cook on HIGH for 6-7 hours.
  • Suction juice out of slower cooker and transfer to a small saucepan (approximately 2 cups); skim off fat.
  • In small bowl, whisk corn starch and ¼ cup cold water to create a slurry. Whisk the cornstarch slurry into the juices. Bring to a boil. Boil 1 minute.
  • Serve chicken with carrots, potatoes and chicken gravy.
