Savory Mushroom & Kale Hand Pies


  • In large skillet, heat oil over medium-high heat. Add mushrooms and shallots; salt and pepper to taste. Saute until softened and slightly browned (about 3-5 minutes). Add kale and cayenne; continue sautéing until kale is wilted. Set aside to cool slightly.
  • Cut 6 (4-inch) circles from each pie crust (you will get 5 from each crust; press remaining dough together and roll out to cut out remaining circle).
  • Divide filling among 6 circles; top with cheese. Moisten edges of dough with water. Place remaining circles over filling. Press edges together to seal; crimp with a fork.
  • Place pies on a greased large baking sheet; cut 3 small steam slits in tops of pies. In small bowl, combine egg with 1 tablespoon water; Brush egg wash on top of pies.
  • Bake in a preheated 375°F oven 15 minutes or until golden brown and bubbly.
