Lemon Pepper Crusted Tilapia
Combine flour and 1 teaspoon lemon pepper seasoning in a shallow dish; place beaten egg in a second shallow dish. In a third shallow dish, combine crushed potato chips, Parmesan cheese and remaining lemon pepper seasoning.
Dust fillets with flour, dip in egg and coat with potato chip mixture; set aside.
In a large skillet, heat oil and butter over medium-high heat. Add fillets to skillet and sauté until golden brown, turning once, and fish flakes easily with a fork (about 10 minutes per inch of thickness).
