Sautéed Chicken for One


  • Sprinkle both sides of chicken with ¼ teaspoon Italian seasoning; salt and pepper to taste. In small skillet with lid, heat 1 teaspoon oil over medium-high heat.
  • Add chicken; sauté until browned on both sides. Add 1 tablespoon water; cover and reduce heat. Cook, turning once, until internal temperature reaches 170°F on an instant read thermometer (about 10 minutes). Remove from skillet; keep warm.
  • Increase heat to medium-high; add remaining 1 teaspoon oil to skillet. Add tomatoes, bread crumbs, parsley, capers and garlic; salt and pepper to taste. Sauté until heated through and bread crumbs are slightly toasted. Serve over chicken.
