Place flour in a shallow dish, buttermilk in second shallow dish and crushed potato chips in third shallow dish. Salt and pepper chicken to taste.
Dust chicken pieces in flour, dip in buttermilk and dredge in potato chips. Place on a baking sheet that has been generously sprayed with cooking spray. Generously spray tops of chicken.
Bake in a preheated 425°F oven 10-12 minutes or until internal temperature reaches 170°F on an instant read thermometer.
Serve with ranch dressing for dipping, if desired.
