Chicken Parmesan


  • Combine bread crumbs, Parmesan cheese, 1 teaspoon Italian seasoning and ½ teaspoon salt in a shallow dish. Place egg whites in another shallow dish.
  • Coat chicken breasts with egg white and then bread crumb mixture. Set aside.
  • In large skillet, heat oil over medium-high heat. Sauté chicken breasts until browned on both sides (about 3-5 minutes). Transfer chicken to a greased 13x9-inch baking dish; set aside.
  • In large bowl, combine tomatoes, garlic, remaining Italian seasoning and salt. Pour over chicken. Top with mozzarella cheese.
  • Bake, covered, in a preheated 350°F oven 35-40 minutes or until chicken reaches an internal temperature of 170°F. Remove cover last 10 minutes of baking.
