Lobster Mac & Cheese


  • Prepare pasta according to package directions; drain. Meanwhile, in medium saucepan, melt 6 tablespoons butter over medium heat. Sauté garlic in butter 1 minute.
  • Whisk in flour; cook 1 minute, whisking constantly. Gradually add in warmed milk, whisking constantly until smooth. Cook over medium heat, whisking constantly, until thickened and mixture comes to a boil.
  • Blend in cheeses (reserving ¼ cup shredded Parmesan) and ground red pepper; salt and pepper to taste. Reduce heat to low and continue stirring until cheese is melted.
  • Toss pasta with sauce; gently stir in lobster, bacon and tomatoes. Transfer to a greased baking dish. Melt remaining 2 tablespoons butter. Toss with bread crumbs and remaining Parmesan cheese; sprinkle over pasta.
  • Bake in a preheated 375°F oven 20-25 minutes or until golden brown on top and bubbly.

Note: Make ahead through step 4 and refrigerate up to 1 day ahead. Remove from refrigerator 30 minutes before baking. Can also be baked in individual ramekins; reduce bake time by 5-10 minutes.
