Gluten Free Mini Corn Dogs


  • In large bowl, combine corn meal, flour, baking powder and salt. In medium bowl, whisk together buttermilk, honey, oil and egg; whisk into flour mixture. Let stand 10 minutes.
  • Pour enough vegetable oil into a Dutch oven or large saucepan to reach a depth of 2 inches. Heat oil over medium-high heat until oil reaches 375°F on a deep fry thermometer.
  • In batches, dip wieners in batter; carefully place in hot oil. Fry, turning occasionally, until golden brown (about 2-3 minutes). Remove from oil with slotted spoon and drain on paper towels. Repeat with remaining wieners. Serve hot with ketchup and mustard.

Tip: Freeze corn dogs in a recloseable freezer food storage bag. Bake from frozen in a preheated 375°F oven 12-15 minutes or until internal temperature reaches 165°F on a food thermometer.
