DIRECTIONS

  • Spray a large nonstick skillet with cooking spray; heat over medium-high heat. Add beans, peppers, onions and cumin; salt and pepper to taste. Sauté until peppers are softened (about 2-3 minutes).
  • Pour egg whites into skillet. Allow eggs to begin setting; slowly pull spatula across egg mixture, allowing uncooked eggs to run under cooked eggs. Continue until eggs are set.
  • Remove from heat; stir in cheese and avocado. Divide mixture among tortillas; fold up burrito style.
