DIRECTIONS

  • In large mixing bowl, combine sugar, apple sauce, eggs, oil and vanilla. Using an electric mixer on medium speed, mix until well combined.
  • Add flour, cinnamon, salt, baking powder and soda. Continue mixing until well combined, scrapping sides of bowl. Add zucchini and continue mixing until well combined.
  • Pour into a greased 9x5-inch loaf pan.
  • Bake in a preheated 325°F oven 45 minutes or until knife inserted in center comes out clean. Remove from pan and cool completely on cooling rack.

Tip: Add ½ cup chopped walnuts with zucchini, if desired.
