Blueberry Flax Muffins


  • In medium bowl, combine flour, cereal, baking powder, baking soda and salt; set aside.
  • In large mixing bowl, whisk together yogurt, honey, oil, eggs and lemon zest. Mix in flour mixture until just combined, do not over mix. Fold in blueberries.
  • Divide batter into 12 lined or greased muffin cups. Bake in a preheated 350°F oven 16-18 minutes or until knife inserted in center comes out clean.
