DIRECTIONS

  • In large bowl, combine flour, cornmeal, sugar, baking powder and cumin; set aside.
  • In food processor or blender; purée corn with liquid and green chiles. Add egg whites, milk and oil; process until just combined.
  • Add corn mixture to dry ingredients and mix until just combined. Divide among 1 (12 count) greased muffin pan.
  • Bake in a preheated 400°F oven 15 minutes. Remove muffins from pan and allow to cool slightly.
