Gluten Free Peanut Butter Blossoms

Gluten Free Peanut Butter Blossoms


  • In large mixing bowl, combine brown sugar, butter and shortening; using an electric mixer on high, beat until light and fluffy, scraping sides occasionally.
  • Add peanut butter, egg and vanilla; continue mixing until combined. Add in flour, baking powder, soda, salt and xanthan gum; continue mixing until well combined. Refrigerate dough 30 minutes.
  • Place ¼ cup sugar in small bowl. Shape dough into 1-inch balls; roll in sugar. Place 2-inches apart on ungreased baking sheet. Place chocolate candy kisses in center of each ball and gently press down to flatten cookie.
  • Bake in a preheated 375°F oven 7-9 minutes or until set and golden brown. Remove from oven; let stand on baking sheet 1 minute. Remove to cooling rack; cool completely.
