Place crushed crackers, cheese and parsley in a shallow dish; salt and pepper to taste.
In small bowl, combine mayonnaise, mustard and garlic powder. Brush on pork chops; coat with cracker mixture.
Place in a 13x9-inch baking dish that has been generously sprayed with cooking spray. Generously spray tops of pork chops with additional cooking spray.
Bake in a preheated 425�F oven 25 minutes or until pork reaches an internal temperature of 155�F.
