Fresh Snap Peas & Carrot Quinoa Salad


  • Prepare quinoa according to package directions; cool completely.
  • Peel carrot using vegetable peeler. Once outer skin is removed, continue to peel entire carrot, creating short carrot curls; cut longer curls into bite size pieces.
  • In large bowl, combine cooled quinoa with carrot curls, snap peas, parsley, mint, onions and vinaigrette; salt and pepper to taste. Toss to coat. Gently stir in feta cheese (if desired).

Tip: Serve over fresh spinach leaves, if desired.
