In 9x9-inch baking dish, combine juice and vinegar; stir in undrained pears.
Bake in a preheated 375°F oven 15 minutes or until pears are soft and liquid is bubbly.
In large bowl, whisk together ½ cup liquid from pears and mustard. Add spinach and cheese; toss to coat. Divide among 6 salad plates. Top with pears.
