Wild Rice Burgers

Wild Rice Burgers


  • In medium saucepan, prepare wild rice according to package directions using vegetable broth; cool rice.
  • Meanwhile, in a medium skillet, heat 1 tablespoon oil over medium heat. Add onions, jalapeño and garlic; salt and pepper to taste. Sauté until onions are softened; set aside.
  • In large bowl, combine eggs, curry powder, smoked paprika and 1 tablespoon oil; salt and pepper to taste. Fold in the shredded cheese, cooled rice, onion mixture and bread crumbs. Form into 8 patties (patties will be delicate); gently set aside.
  • In large skillet, heat remaining oil over medium-high heat. Carefully add burgers and cook 3 minutes; gently turn over. Top with cheese slices and cover skillet; continue cooking 3 minutes.
  • Spread toasted buns with mayonnaise and mustard; top with tomatoes, onions, lettuce and burgers.
