In medium bowl, combine batter mix, club soda, ¼ teaspoon cayenne, ¼ teaspoon black pepper and ¼ teaspoon salt. Whisk until just combined; set aside.
In large pot or Dutch oven, add oil until 1/3 full; heat over medium heat until deep-fry thermometer reaches 375°F.
Meanwhile, sprinkle zucchini slices with remaining cayenne, black pepper and salt.
In batches, dip zucchini slices into batter, shaking off excess batter. Carefully add to hot oil. Fry 3-5 minutes or until golden brown. Remove and drain on clean paper towels. Sprinkle with additional salt and pepper immediately, if desired.
