Tuscan Bean Soup


  • In large saucepan or Dutch oven, heat oil over medium heat. Add onions, carrots, celery and garlic; sauté until onions are softened (about 3-5 minutes).
  • Add chicken broth and beans; bring to a boil. Reduce heat; simmer until beans are softened (about 1–1½ hours).
  • Add ham and rosemary; salt and pepper to taste. Continue simmering until heated through. Serve with Parmesan cheese.
