DIRECTIONS

  • In large saucepan or Dutch oven, heat oil over medium-high heat. Add pork, onions, cumin, chili powder, garlic and cayenne; salt and pepper to taste. Sauté until onions are soft (about 3-5 minutes).
  • Add chicken broth and hominy; bring to a boil. Reduce heat and simmer, covered, 1½ hours or until pork is fork tender.
  • Stir in cilantro. Serve with lime wedges and corn tortillas, if desired.
