Grilled Halibut & Mango Salsa

Grilled Halibut & Mango Salsa

DIRECTIONS

  • In small bowl, combine 2 tablespoons lime juice, oil, 1 teaspoon garlic, lime zest, cumin, chili powder and cayenne pepper; salt and pepper to taste. Place halibut in a 1-gallon recloseable food storage bag. Add marinade; seal bag and gently toss to coat. Marinate 30 minutes.
  • Prepare grill or grill pan to medium heat. Remove halibut from marinade; discard marinade. Place halibut on grill; grill, turning once, until internal temperature reaches 145°F on an instant read thermometer (about 10 minutes per inch of thickness).
  • Remove from grill; cool completely and cut into 1-inch pieces. In large bowl, combine mangos, tomatoes, avocado, cheese, cilantro, remaining 2 tablespoons lime juice and remaining 1 teaspoon garlic; salt and pepper to taste. Toss to combine well.
  • Add fish and gently fold together. Serve with tortilla chips.
