Cauliflower Potato Pancakes
Prepare cauliflower according to stovetop package directions, adding onions and garlic. Drain and chop finely.
Transfer to a large mixing bowl; add prepared potatoes, eggs and flour. Whisk until just combined; stir in cheese and cayenne pepper. Let stand 10 minutes.
Heat flat skillet over medium heat. Add about ¼ cup batter onto skillet, repeat to fill skillet. Cook 2-3 minutes per side or until golden brown.
